Almond Butter Cookies Recipe

Today, we're sharing a recipe for delicious Almond Butter Cookies that are crunchy, light, and perfect for enjoying with a cup of aromatic afternoon coffee. To keep the cookies crispy, store them in an airtight container. If you've baked them ahead of time and they've lost their freshness, pop them into the oven at 350F (175C) for a few minutes. You can also pipe the dough onto a baking sheet and freeze it for later use.
This recipe is easy to make using either a hand/stand mixer or a simple whisk.
Prep Time: 10 minutes
Baking time: 15 minutes
Equipment: mixer/whisk, baking sheet, piping bag, spatula, parchment paper
Starting with a cookie butter:
Make sure to take your unsalted butter and egg out of the fridge in advance so they can come to room temperature.
Whisk together 113g (1 stick) of unsalted butter and 70g (2/3 cup, not packed) of powdered sugar until the mixture is light, pale, and airy.
In a small bowl, whisk 1 egg and mix half of it into the butter mixture. Once that is fully incorporated, whisk in the remaining half of the egg.
Finally, add 1 tsp of vanilla paste.
5. Next, add the dry ingredients all at once:
1/4 tsp salt 80g (1/4+1/4 cup) all-purpose flour
20g (2 full tbsp) corn starch
30g (1/4 cup, packet) almond meal
6. Mix everything together until well combined. With this recipe, you don't need to mix for a long time. With a mixer, we recommend mixing each step for about 2 minutes.
Piping cookies:
7. Cut a piping bag to 0.8cm (5/16 inch). If you don't have a piping bag, use a regular plastic bag or ziplock bag that you have on hand. Cut a corner off, and you're ready to pipe!
8. Pipe the cookies to be about 4-4 1/2 inches or 10-11 cm.
9. Bake them at 315F (160C) for about 15-20 minutes and let them cool on a cookie rack. Make sure they lay flat on the cooling rack as they will deform otherwise.
