Balsamic Strawberry & Ricotta Crostini Recipe

You can sautee or roast the Strawberries. Roasted berries will be less squishy, but sauteeng them is a faster/easier way.
Top Crostini with thinly sliced Mint Leaves for a mild Mint taste or add those chopped Mint Leaves directly into a pot with Sauteed Strawberries at the end of the cooking for a stronger Mint flavor.

Begin by sauteing strawberries for our Crostini:
Slice 12 oz (350 g) Fresh Strawberries and put them in a pot.
Add 1 tbsp Sugar, 1/2 tsp Black Pepper, 1 tbsp Balsamic Vinegar, and a pinch of Salt.
Simmer over medium heat for about 5 minutes. As the Strawberries soften and release the juices, lower the heat to a minimum and keep simmering to thicken the Sauce. Don’t forget to stir it often, as Sugar can burn easily.
As the Sauce is thick enough to be put on top of Ricotta Cheese, remove pot from the heat (this should take about 5-10 min).
Let it cool before mixing in 2 tbsp of chopped Fresh Mint Leaves.
6. While Sauce is thickening, cut Baguette into slices.
7. Brush the slices with Olive Oil and roast or broil them to achieve that golden and crunchy top.
8. Now assemble! Spread 1 tsp of Ricotta Cheese per baguette slice and top with Strawberry Sauce.
9. Sprinkle thinly sliced mint leaves over your Crostinis and Enjoy!

1 tbsp Sugar
A pinch Salt
2 tbsp Olive Oil
