Broccoli Cheddar Soup Recipe
Yes, even better than Panera!
This Broccoli Cheddar Soup is creamy, nourishing and delicious with a hint of garlic and cayenne pepper.
Prep Time: 15 minutes
Cooking Time: 30 minutes
Equipment: Knife, Cutting Board, Pot, Grater
Start Chopping!
Chop the veggies:
1 Onion
2 cloves Garlic
3 cups (300-400 g or 1 medium crown) Broccoli
Shred 2 cups (1 medium-sized) Carrot.
2. In a pot melt 1/2 stick (60 g) of Butter.
3. Add Onion & Garlic, simmer for 5 minutes.
4. Add 1/2 cup (60 g) of Flour. Stir fast.
5. Add 2 cups (500 ml) Chicken Stock right away. Use the spoon to break any flour clumps. Cover with lid and cook to a "before boiling point".
5. Mix in 1 cup (250 ml) Heavy Whipping Cream. Cover the pot with lid and simmer for 5 minutes.
6. Time to mix in shredded Carrot and chopped Broccoli.
7. Season with 1 tsp Black Pepper & 2 tsp Salt.
8. Cover with lid and simmer (do not boil) until Broccoli cooks to a desirible texture.
9. When Broccoli is cooked, mix in 1 1/2 -2 (100-150 g) cups of Shredded Cheddar Cheese.
10. Add 1 tsp Garlic Powder & 1 tsp Cayenne Pepper and serve! Your Soup is ready!
