Cheese Blintzes Recipe, Cheese-Filled Crepes:

These tender crepes, filled with a creamy cottage cheese mixture, and topped with a dollop of sour cream, are sure to become a family favorite. Let's get started on this delightful dish.
Prep Time: 40 minutes
Baking time: 15 minutes
Equipment: mixer/whisk, skillet, spatula
Starting with the Crepe Batter:
In a bowl, combine
4 eggs
1 1/2 cup (400 ml) whole milk
4 tbsp (30-40 g) cornstarch
2 tbsp (20 g) sugar
1/2 tsp salt
1/2 tsp vanilla extract
1 tsp vegetable oil
2. Mix until the mixture is smooth and well combined. You can use stand or hand mixer in this step, I find that simple whisk works just fine.
3. Allow the batter to rest for 15-20 minutes to let the cornstarch to expand.
Make the Filling:
4. In a separate bowl, combine:
10 oz (280-300 g ) small curd cottage cheese (you want it to be dry)
1 egg
3 tbsp sugar
1/2 tsp vanilla extract
You can also add poppy seeds or dried fruits and berries here (such as raisins).
5. Mix until the filling is thoroughly combined. Set it aside.
Cook the Crepes:
6. Heat a skillet or crepe pan over medium-high heat and lightly grease it with vegetable oil or butter.
7. Pour a small amount of the crepe batter into the pan, swirling to coat the bottom evenly.
8. Cook each crepe for about 1-2 minutes until they turn lightly golden. I am cooking mine on one side only.
Fill the Crepes:
9. Place a spoonful of the cottage cheese filling onto each crepe.
10. Fold the sides of the crepe over the filling, then roll it up to create a neat package.
Prepare the Topping:
11. This step is optional. Combine 10 oz of sour cream with powdered sugar and a dash of vanilla extract, adjusting the sweetness to your preference. I didn’t use sugar in this step as I was planning to serve the crepes with jam.
Bake the Blintzes:
12. Preheat your oven to 350°F (175°C).
13. Arrange the filled blintzes in a baking dish.
14. Optionally, top the blintzes with sour cream.
15. Bake in the preheated oven for approximately 15 minutes, or until they are heated through and slightly crispy on top.
Serve the Blintzes:
16. Remove the baked blintzes from the oven.
17. Serve the blintzes warm, each one topped with a generous dollop of sweetened sour cream.
18. Pair them with your favorite jam, fresh fruits and berries, sweetened condensed milk or Nutella.
