Prep Time: 10 minutes
Baking time: 25 minutes
Equipment: mixer/whisk, muffin pan, spatula, muffin liners
Let’s start the baking!
To begin crafting these delectable Blueberry Muffins, gather the following ingredients in one bowl:
1 cup (150 g) of flour
1/2 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt
2. In a separate bowl, combine:
2 oz (50 g) of softened butter
1/2 cup (100 g) of sugar
3. Using a hand mixer or a stand mixer, beat the mixture until it turns light and smooth.
4. Now, add in 1 Egg and 1/2 tsp of vanilla extract.
5. Next, incorporate half of the dry ingredients into the mixture.
6. Once that is well combined, gently mix in 1/2 cup (140 g) of greek yogurt.
7. Once the yogurt is fully incorporated into the butter mixture, add the remaining half of the dry ingredients. Be careful not to overmix; you can use a spatula for this step.
Now, it's time to transfer our batter into the muffin pan:
I personally prefer to have the blueberries on top, but if you desire a more moist texture, you can mix the blueberries into the batter before spooning it into the muffin pan. In that case, consider baking them for an additional 5-7 minutes.
8. Transfer the butter into the muffin pan.
9. Place frozen blueberries on top of each socket (1 cup of blueberries in total).
10. Bake the muffins at 350°F (175°C) for approximately 25 minutes. Once they are done, remove them from the oven and let them cool on a cookie rack.
11. Now, all that's left to do is indulge in these delightful Greek Yogurt Blueberry Muffins. They are truly a treat to savor. Enjoy!
