Palmiers Recipe
Crunchy, flaky Cookies with buttery flavor that just melt in your mouth. We present you Palmiers Recipe made with Homemade Puff Pastry!
You can always make these with store-bought Puff Pastry.
But in this particular Recipe we decided to show you how to make your own Puff Pastry with good-quality ingredients. You'll be surprised by how easy it is!
You can also make Palmiers with any filling you like, just make sure to adjust the baking time.

Equipment: Baking Sheet, Cling Wrap, Parchment Paper, Food Grater, Knife
Make sure all the Ingredients are cold!
Freeze 1 cup (226 g or 2 sticks) of Butter before using (overnight).
I even put the Flour and a mixing bowl in the fridge for 30 min.
In a chilled bowl combine 2 cups (250 g) All Purpose Flour and 1 tsp Salt.
Grate Butter in portions and cover each portion with Flour.
You gotta work fast. If Butter starts melting, put everything back in the freezer for 5-10 minutes.
When all Butter is grated add 2/3 cup (160 ml) Ice Cold Water. I put Water in the Freezer for 15 minutes.
Combine everything together with spatula.
Now it’s time to knead the Dough. It may look weird, but it will come together as the heat from your palms starts to soften the Butter.
Let it sit in a freezer for 30 minutes.
8. Roll the Dough until it’s 1/2 inch (2.3 cm) thick.
9. Make sure it folds the way it’s shown in the picture above.
10. Now add your Filling. I didn’t want my cookies to be sweet so I sprinkled them with just a little bit of cinnamon sugar. But you can go ahead and add as much Sugar or your favorite Spices as you want!
11. Fold the Dough and put it in the freezer for at least 1 hr. I usually freeze it overnight.
12. Let the Dough sit a little bit at room temperature so it softens enough for you to be able to cut it with a knife.
13. Cut the Dough into 0.4 inches (1 cm) thick pieces.
14. Line them on top of the Parchment Paper and bake at 425F (218C).
15. Baking time depends on the initial temperature of the Dough, the amount of Sugar you added, and the thickness of your cuts. It can be as fast as 3 minutes per side. But I baked mine for 20 minutes on one side and 10 minutes on the other.
Just keep an eye on your first batch. Check what color your cookies are after the first few minutes in the oven. Once they start caramelizing - time to flip!
