Chocolate Banana Cake

Who doesn’t love a good Chocolate Cake? How about a Chocolate Banana one?

This is a moist, cacao-rich cake with light, airy cream and fresh banana. It’s the perfect size-not too big and not too small, plus, you can prepare the sponges in advance and put them in a freezer for a future use.

We do use a whole milk soak for the extra moisture, but you can substitute it with any other milk of your choice.

  • Prep Time: 30 minutes

  • Baking time: 10 minutes

  • Equipment: mixer, 9 inch (23 cm) baking pen, spatula, knife, bowls, whisk

Grab the Mixer and let’s bake!

  1. In a bowl mix together:

  • 1/3 cup (100 g) All-Purpose Flour

  • 1 tsp (5 g) Baking Powder

  • 2 tbsp (15 g) Cocoa Powder

2. In a separate bowl beat together 2 Eggs & 1/2 cup (100 g) Sugar

3. While still using a mixer, slowly add into the bowl 1/4 cup (50 ml) Vegetable Oil

4. Add Dry Ingredients into the bowl and gently mix with a whisk

5. Now divide the cake butter into the two equal portions and transfer each of them into a 9 inch (23 cm) baking pen. I had to repeat the process twice since I only had 1 baking pan available

6. Bake the cake sponges for 8-10 minutes at 375F (190C) depending on your oven

While sponges are in the oven, make the cream:

7. This step is easy. Using a mixer, whip together the ingredients until it’s smooth and holding its shape:

  • 1/4 cup (30 g) Cream Cheese

  • 2 tbsp Condensed Milk

  • 3/4 cup (150 ml) Heavy Whipping Cream

Assembling the cake:

8. Let the sponges cool a little to prevent the cream from melting and soak the first sponge.

For the soak, mix together 50ml Milk & 1 tsp Sugar. Make sure the sugar has fully dissolved in milk.

Do not be afraid and add a generous amount of soak. Check the video for the reference.

9. Put the desirable amount of cream on top of the first sponge (make sure you have some cream left for the topping)

10. Cut fresh banana in slices and arrange them over the cream

11. Put the second sponge on top and add the remaining soak

12. Cover the cake with remaining cream and arrange some decorations of your choice on top

13. You can eat the cake right away. Enjoy!

  • 1/4 cup (50 ml) Vegetable Oil

  • 1/3 cup (100 g) All-Purpose Flour

  • 1 tsp (5 g) Baking Powder

  • 2 tbsp (15 g) Cocoa Powder

For the Cream:

  • 1/4 cup (30 g) Cream Cheese

  • 2 tbsp Condensed Milk

  • 3/4 cup (150 ml) Heavy Whipping Cream

For the Filling:

  • Fresh Banana

For the Soak:

  • 1/4 cup (60 ml) Milk

  • 1 tsp Sugar
