This Lemon-Ricotta Cake is just so creamy and zesty!
We recommend eating it while it's warm.
Prep Time: 15 minutes
Baking Time: 45-50 minutes
Equipment: 6-8 inch (15-20 cm) Baking Pan, Mixer, Citrus Juicer, Grater
To make our Lemon Cake start with…Lemons!
Juice and Zest 1 Lemon.
Beat together 3 Egg Yolks and 1/2 cup (100 g) Sugar.
Add Lemon Juice and Zest.
4. Mix in:
3 tbsp (40 g) Butter at room temperature
1 1/4 cup (300 g) Ricotta Cheese
1 tsp Vanilla Extract
5. Add 1/3 cup (50 g) Cornstarch, mix well.
6. In a separate bowl, beat 3 Egg Whites.
7. Fold Egg Whites into the Dough.
8. Bake at 350F (175C) for 45-50 minutes.
9. Cover with Powdered Sugar & Lemon Zest.
10. Enjoy!
