Plum Yogurt Cake or any other fruit Yogurt Cake you love.

You can substitute plums with apricots, peaches, apples, pears, mandarins or berries depending of the season.

This is a delicious, sweet, soft and fruity cake that feels like a sunny day on your plate.

The cake butter is easy to make, all you need is a mixer to beat the eggs.

We used sunflower oil in our recipe, but you can use another neutral vegetable oil of your choice if that’s what you have in your kitchen.

  • Prep Time: 30 minutes

  • Baking time: 30 minutes

  • Equipment: mixer, 9 inch (23 cm) baking pen, spatula, knife, bowls, cutting board

Start with a Cake Butter:

  1. In a bowl mix together:

  • 3 Egg Yolks

  • 1 tsp (5 g) Baking Powder

  • 3/4 cup (150 g) Sugar

2. Slowly add in 1/4 cup (60 ml) Sunflower Oil while mixing

3. Mix in 1/4 cup (60 g) Whole Milk Yogurt

4. Now it’s time to add:

  • 1 cup (150 g) All-Purpose Flour (sifted)

  • 1 tsp Baking Powder

  • 1 pinch of Salt

5. Beat 3 Egg Whites to stiff peaks

6. Slowly fold in Egg Whites into the butter

7. Line the 9 inch (23 cm) baking pan with parchment paper

8. Transfer the cake butter into the pan

9. Cut each of 3 fresh Plums onto 4 peaces

10. Place plum peaces on top of the cake butter.

Depending on the initial weight of the fruit peaces they will either stay on the surface of the cake when it’s fully baked or sink inside.

11. Bake at 350F (175C) for about 30 minutes

12. Let it cool to the room temperature to prevent Icing Sugar from melting

13. Sift some Icing Sugar on top of the cake.

14. Cut and Enjoy!

  • 1 pinch of salt

  • 3 plums

For the Topping:

  • Icing Sugar
