Breakfast Idea - Parmesan Egg Roll with Arugula Salad
Eggs for Breakfast!

Make sure you do not overcook the Eggs, as you want the roll to be soft and fluffy.

Cooking time: 5 minutes
Servings: 1
Equipment: Pan, Cheese Grater, Cutting Board, Knife, Spatula
Start with quick Arugula Salad.
In a small bowl mix together:
2-3 tbsp Lemon Juice
2 tbsp Olive Oil
1/4 tsp Mustard
A pinch of Salt
Combine the Dressing with 1 cup Fresh Arugula, set aside.
How to make an Egg Roll:
3. Beat together the Ingredients:
3 small Eggs (2 large ones will work fine)
1/4 cup Grated Parmesan Cheese
5 tbsp Heavy Whipping Cream or Half & Half
A pinch of Salt
Fresh herbs of your choice (this one is optional, I used Parsley leftovers from the fridge)
4. Heat a pan, drop in 1 tbsp of Butter or Vegetable Oil.
3. Spread some amount of Eggs on a pan. It should look like a thick crepe. Roll it with a spatulas as soon as it becomes thick anough to not break, but is not cooked through yet. If you've add too much Eggs and now it's too runny to be rolled but starts to brown on the bottom, don't worry, just push your partial roll back to the side of the pan, this will make more room for the Eggs to spread and cook through. You can repeat this step if needed.
4. As you roll all of the Egg crepe, push it to the opposite side of the pan and add some more Eggs. Roll the previous portion over the new one. Repeat this step a few times. You can always check the video recipe below if you need more instructions.
5. Now you can serve your Breakfast. Transfer Egg Roll onto a plate, put Arugula salad on a side. Sprinkle with Chia Seeds and Red Pepper Flakes.

Egg Roll:
3 small Eggs
