Strawberry-Ricotta Tart Recipe
Strawberry Tart is the perfect dessert to be served with black tea or coffee.
This beautiful tart recipe combines three delicious elements: a crisp shortbread Crust, a creamy Ricotta Filling, and fresh strawberries for the Topping.

Equipment: Tart Pan, Parchment Paper, Blender, Rolling Pin, Compostable Cling Wrap, Cookie Cutters
Let's start with Tart Dough:
Use a Food Processor to knead the Dough. Combine 1 1/2 cups (250g) All-Purpose Flour with
4 oz (120g) cold Unsalted Butter and blend it for 1-2 minutes. Add 2 Egg Yolks, a pinch of Salt, and 2-3 tbsp cold Water. Knead the Dough until combined into one piece.
Put the Dough in a Cling Wrap and let it chill in a fridge for at least 1 hour.
3. Roll the Dough between 2 baking sheets. Transport the Dough over a tart pan. Gently push it into the corners with your fingers. Trim off the excess Dough by rolling the pin over the top of the tart pan. Use a cookie cutter to make some decor from scraps.
4.Prick the Dough with a fork and bake for 15 minutes at 400 F (204C). Let cool.
Make a Ricotta Filling:
5. In a bowl combine:
9 oz (250g) TJ's Ricotta Cheese
1/4 cup (40g) Sugar
1 Egg1/4 cup (50ml) Whipping Cream
Use a food processor or blender to make the Tart Filling more creamy.
6. Pour it over the tart base. Bake at 360F(182C) for 40-45 minutes. Let it cool.
Decorate!
7. Slice about 16 oz Fresh Strawberries and arrange them on top of the Tart.
