Valentine’s Day Cupcakes Recipe

These are Vanilla Cupcakes with Strawberry Jam Filling topped with Lightweight and Fluffy Frosting. No buttercream this time. Best homemade romantic surprise for Valentine’s Day.
Store these in the fridge in an air-tight container. Add sprinkles right before serving as they might melt and color the Frosting.

Equipment: Muffin Pan, Piping Set, Mixer, Cupcake Liners
Baking the Cupcakes:
In a bowl mix Dry Ingredients and set aside
1 1/2 cup (180 g) All-Purpose Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
In a separate bowl beat together 2 Eggs & 1/2 cup (100 g) Sugar until Sugar fully dissolves
Add 3/4 cup (170 ml) Melted Butter in portions while beating the Eggs
Make sure Butter is not very hot
Add 2 tsp Vanilla Extract
5. Start adding in portions 1/2 cup (120 ml) Milk & Dry Ingredients (alternate)
6. Line your muffin/cupcake pan with liners. Distribute the Dough
7. Bake for 30-35 min at 350F (175C). If you are not sure if your Cupcakes are baked through, just make a hole in one of them (you will do it later anyway) and check the inside. If it’s not chewy - time to get them out from the oven. If it’s not ready yet - just put it back into the oven
8. Make holes in the Cupcakes. Fill them with your favorite Jam
Time to make some Heavy Whipping Cream Frosting!
9. Beat together
1/4 cup (20 g) Powdered Sugar
1 1/4 cup (300 ml) Heavy Whipping Cream
1/2 tsp Vanilla Extract
Check consistency of the Frosting repeatedly. It’s very easy to overbeat the Cream, so it gets grainy consistency. It should be smooth and silky while being firm enough to hold its shape.
10. Pipe the Frosting using your favorite piping tip on top of the cupcakes. Or just use a spoon
11. Add Sprinkles and Enjoy!
